Whether you are vegetarian or not, these stuffed zucchini are suitable as a dish or as a side dish to eat with some proteins.They are flavored with a mushrooms stuff and the mix of these 2 flavors tastes really great. This recipe is one I imagined when I was on a diet and people on a low calories diet will also enjoy this recipe which is much more tasty than boiled vegetables!
Ingredients (4 servings)
- 4 Zucchinis
- 400 Gr Mushrooms
- 60 Gr Bread
- 1 Egg
- Milk
- 20 Ml Olive oil
- 1 Handful powdered thyme
- Salt and pepper
Directions
- Place bread in a bowl and cover with milk
- Bring a large pan water to a boil
- Wash zucchini, cut the ends and cook in the boiling water pan for 10 minutes
- Drain and dip them in cold water to cool them down
- Wash mushrooms and chop them
- Pour olive oil in a pan, add mushrooms, thyme , salt and pepper as taste and cook for 5 minutes over medium heat. Stir
- Transfer into a bowl and add dipped bread. Knead and add egg. Knead again until all ingredients are combined.
- Preheat oven to 170°
- Cut zucchini lengthwise. Remove half of the pulp from each with a spoon and add pulp to the stuff. Mix stuff again
- Fill zucchini generously with the stuff. Pour 10 Cl water in a baking dish and add zucchini
- Top them with breadcrumbs
- Put in oven for 15 minutes
