My parents have several old lemon trees in the garden. These old lemon trees are highly productive and it would be a pity to waste these lemons. We cook lemon buttered prawns with them, my Mum also makes lemon liqueur. From time to time, I cook lemon curd and I use to rack my brains to imagine new lemon-based recipes. Lemon flavored chicken is one of these. Lemon flavoured chicken is absolutely delightful whether cold with a mixed salad or hot with simple boiled potatoes. Just remember you have to let chicken fillets to marinate overnight.
Ingredients (4 servings)
- 4 Chicken fillets
- 4 Lemons
- 1 Table spoon olive oil
- 1 Table spoon powdered thyme
- 400 gr Double cream
- Pepper and salt as taste
Instructions
- Squeeze lemons, pour the juice in a dish and add 1 table spoon olive oil, 1 table spoon thyme (or rosemary)
- Place the chicken fillets side by side
- Cover the dish with a plastic wrap and place in fridge. Let marinate overnight
- The next day, preheat a pan and cook chicken fillets on each side over high heat in order to brown them (about 5 min)
- Reduce heat, add remaining marinade and cream
- Cook about 10 min while stirring
- Add pepper and salt as taste
- Yum! Delicious served with pasta or boiled potatoes…
